Today is International Chocolate Day, sooo basically our favourite day of the year!
We have decided that we didn’t feel like stopping at chocolate. We wanted to take the chocolate, and then add everything we love combined with chocolate, freeze it (for summer of course), dip it in more chocolate and then sprinkle it with whatever we deemed necessary.
Because, well, chocolate.
Time hasn’t really been on our side over the past couple months. Summer is busy, incase you haven’t noticed, so we thought lets keep it simple with easy ingredients, popsicles and fudgey goodness.
Chocolate + peanut butter + banana- and the double dipped chunky monkey fudgesicle is here! Drizzled peanut butter, chocolate chips, fudge, banana chunks, seriously, how can you go wrong?
So we whipped up this recipe because we thought the mini naughty (16 month old Olivia) would love to double dunk her popsicle, and then we realized she’s only 16 months and doesn’t give a crap about all that, she just wants to consume them, and make a mess of the whole house. But if you want, this can be a really awesome activity with older kids. They’ll get a kick out of dunking the frozen treat in chocolate, and then sprinkling add ons on top of it (which we have given some options at the bottom). And to some of you, that might sound like too much work, so we have you covered as well. This recipe is really quite simple, without all the dunking and the toppings. They work magically as plain fudgesicles so you really get to pick your effort level. Make them with coconut milk, almond milk, full fat greek yogurt, organic cream, whatever your heart desires, either way, they are low sugar, packed with healthy fats and protein, and completely delicious.
And of course we cant leave this post by telling you what nutrition kick you’ll get out of it…. obvi…
So, for the coconut milk lovers, you gotta go full fat and get the canned stuff (ingredients should be: coconut extract and water), that way you are avoiding all that additive nonsense that is packed into the cartons. The full fat stuff is loaded with nutrients; you have nearly 10% of your daily value of iron, magnesium, potassium and zinc (some of the best minerals) in one cup. High in a medium chain triglyceride called lauric acid, the fat in coconut is digested and absorbed very easily, making it a great source of energy.
We always preach about chocolate, but more importantly cacao powder. Organic, fair trade cacao is loaded with antioxidants and nutrients, and as a matter of fact, we would put raw cacao on the top of our list as one of the worlds healthiest foods- we literally have so much to say about it, we wrote an amazing chocolate article around Valentines day to get you all in the chocolate mood. But our favourite fun fact about chocolate is that when you crave it, the best thing to do is to eat more of it! Yes, when you crave chocolate, it’s usually your body’s way of telling you that it’s missing a little bit of this wonderful mineral called magnesium, and cacao is loaded with the stuff. So, make it yourself, have these amazing fudgesicles, get 70%+ organic stuff in a bar, however you choose to do so, just chocolate it up, because it’s great!
And last the banana and peanut butter amazing combination include healthy fats, electrolytes and clearly deliciousness.

Double Dipped Chunky Monkey Fudgesicles
Peanut Butter Drizzle
- 2 Tbsp peanut butter
- 1/2 Tbsp maple syrup
- 2-3 Tbsp water
- 1 can full fat coconut milk *see notes
- 1/4 cup + 1.5 Tbsp cacao powder
- 1/4-1/3 cup maple syrup or raw honey; depends on how sweet you want it to be
- 1 Tbsp chia seeds
- 2 bananas reserve half of one for banana chunks inside
- 1/4 tsp cinnamon
- sprinkle of sea salt
- 3/4 cup dark chocolate chips vegan 70%+
- sprinkle on: chopped peanuts, toasted coconut, whole chocolate chips, chopped dates, granola, dried berries, hemp seeds, toffee crumbles, graham crackers etc.
- For the peanut butter drizzle, take all ingredients and mix thoroughly until you have a sauce like consistency. If it’s too thick and won't mix very well, slowly add in 1/2 Tbsp of water at a time. Set aside.
- Blend all the fudgesicle ingredients in a high powdered blender.
- Take your popsicle moulds and drizzle in about 1/2 Tbsp of peanut butter into the side of the mould.
- Next, add in your banana chunks and/or some chocolate chips, about 3-5 pieces (if you like the texture).
- After your peanut butter and chunks are in the mould pour your fudgesicle mixture, and fill as close to the top as possible. You may need to push the mixture down past the banana chunks if you see space left in the mould.
- Add the sticks into the mould and freeze overnight.
*If you don’t like the taste of coconut, swap out the can of coconut milk for 1.5 cups of almond milk, organic cream or full fat greek yogurt. **You can make these as plain fudgesicles, in which case just puree all of the ‘fudgesicle’ ingredients, and omit the banana. If you choose to use banana, cut up half of it into chunks so you can layer your fudge pops with banana chunks.
