From my childhood, Iâve really been into Thai flavours. The combination of the herbs and spices, and the intense burst of flavours always felt like comfort food to me!
This recipe was inspired by my love of cooking simple, yet tasty meals. Itâs for anyone who enjoys chicken, but is bored of that old-style bland chicken breast recipes which are sometimes hard to eat because they have the same taste profile.
Well, this Coconut Lime Chicken recipe is the ultimate taste changer. Itâs a very easy and quick recipe that can be made in less than 30 minutes (including prep time), and with only a handful of ingredients. Itâs creamy and juicy, and the burst of lime flavor you will get is super awesome.
How To Bring Out The Most Flavour with this Coconut Lime Chicken Recipe
As we will be making this dish on a skillet, the key to any skillet chicken is to get that good browning on it, and this comes when you first add the chicken to the hot pan. So, make sure to heat up the oil and ensure the pan is hot so you get that sizzling (but not burning) sound.
When you get some good browning, or let’s say coloring on the chicken pieces it further enhances the taste profile, because those crispy bits of chicken in the pan will make your sauce more rich and delicious.
What to Serve with Coconut Lime Chicken?
You can simply serve the Coconut Lime Chicken with some greens, steamed vegetables or roasted potatoes, brown rice or cauliflower rice (for low carb version), so you can take full advantage of that rich creamy sauce.

One Pan Coconut Lime Chicken With Garlic & Ginger
Ingredients
- 4 chicken breasts about 1 1/2 pounds
- 1 shallot diced
- 1.5 cups full fat coconut milk
- 1 tbsp fresh ginger grated
- 1/4 cup chicken broth
- 4 cloves garlic minced
- 1/3 cup lime juice about 2 limes
- 1/4 cup fresh cilantro chopped (plus more for topping)
- 1/4 tsp Salt and pepper to taste
- 2 tbsp avocado oil or coconut oil
- Lime slices for topping optional
Directions
- Take two pieces of parchment paper and pound the chicken breasts to make them even in thickness.
- Sprinkle with salt and pepper (each side).
Heat a large skillet over medium-high heat and add coconut oil or avocado oil.
- Once hot, add the chicken breasts and cook until a nice brown for about 3-4 minutes.
- Flip the chicken and cook until the chicken is mostly cooked through for another 3-4 minutes on the other side.
- Lower the heat to medium and remove chicken from the skillet.
- Now add garlic and shallot to the pan (add more oil if needed) and Cook for 1-2 minutes, stirring constantly.
- Add coconut milk, chicken stock, ginger, lime juice, and cilantro. Stir to mix, scraping up the crispy browned bits remaining in the pan.
Add the chicken back to the skillet. Cover and Simmer for 5 minutes on low or until the chicken is fully cooked*.
- Serve with potatoes, vegetables, rice or cauliflower rice.
- Sprinkle with fresh cilantro and enjoy.

*Ensure chicken is cooked through to an internal temperature of 74°C (165°F).
