Inside Scoop: You’re going to love infusing wild berry tea into this creamsicle recipe. It’s completely plant-based, low in sugar and loaded with antioxidant benefits.

What does your tea situation look like?

Do you stick to black tea? Keep it nice and herbal in the evenings? Love a matcha boost instead of coffee?

Whatever the case, we often forget just how versatile tea can be, and one amazing way to have your tea (and literally eat it too) is to play with chilled summer flavours.

For us? We were inspired by Four O’Clock Tea’s Wild Berry flavour in the middle of this heatwave, and we’re whipping up infused mock sangrias, slurpees, chilled tea ice cubes, and… this delicious Lime & Wild Berry Tea Creamsicle recipe!

Berry teas are the best! They are the one kind of tea that if you’re used to having a sweet treat, they help to kill those sugar cravings. That’s because they have a sweet taste to them (but aren’t actually loaded with sugar), and if you add a little bit of maple syrup, or even a couple of drops of liquid stevia, they make the base for a delicious sweet beverage that you can replace pop or juice with.

But, besides creating healthy drink alternatives, berry tea makes the perfect sweet addition to popsicles, especially this Berry & Lime Creamiscle recipe.

If you want to keep it super easy you can simply freeze iced wild berry tea with fresh fruit, but we like a bit of creamy texture and some healthy fats in our antioxidant loaded popsicle recipes, hence us turning this delicious treat into a creamsicle.

Berries, Coconut Cream & Lime

The multi-layers make it seem as if this creamsicle recipe needs a minute to put together, but don’t let it fool you, it takes little to no time. You can also opt-out of the multi layers, just blend everything into one and pour into your popsicle moulds.

We simply steep Four O’Clock Wild Berry tea flavour, add some fresh berries, coconut cream, lime juice and maple syrup to a blender and blend until smooth.

That easy!

Here’s what we’re digging the most about this creamsicle recipe:

  • Four O’Clock Wild Berry tea is an herbal tea, which makes it a wonderful option for families! We love that they use organic and fair-trade ingredients, and the addition of rooibos, hibiscus, fresh fruit and marigold flowers means that the tea is loaded with antioxidants and anti-inflammatory benefits. All the while, tasting amazing with a hint of sweetness and a rich berry flavour.
  • The healthy fats from full-fat coconut milk helps give this creamsicle recipe a little bit more depth, flavour, richness and helps to keep us feeling full for longer. We love that coconut milk contains medium-chain triglycerides (MCT), which may help with weight loss, energy production, and brain function.
  • Antioxidant benefits from fresh berries, especially blueberries! We added frozen wild blueberries to the blend because, not only are they totally delicious and tend to contain more flavour than regular blueberries, but they are believed to have some of the highest amount of antioxidant (flavonoid) levels out there!

As you can see there are plenty of reasons why whipping up this Wild Berry Tea Creamsicle recipe will hit the pleasure centers in your brain. Infused with delicious tea, berry flavours, coconut milk and sweetened with a hint of maple syrup, you really can’t go wrong.

Berry layer

  • 1/2 cup Four O’Clock Wild Berry tea steeped
  • 1/2 cup blueberries frozen or fresh
  • 1/4 cup strawberries chopped
  • 1.5 Tbsp maple syrup
  • 1 lime juiced
  • 1.5 Tbsp full-fat coconut milk canned

Cream layer

  • 1 cup full-fat coconut milk canned
  • 1 lime
  • 1/4 cup maple syrup
  • 1-2 Tbsp Four O’Clock Wild Berry tea steeped
  • Optional: fresh sliced berries to add to the creamsicles

For layered creamsicle:

  1. Blend your berry blend layer in a high-powered blender until you have a smooth consistency with no chunks.
  2. Meanwhile, add any fresh fruit to the bottom of your moulds for a chunky consistency (about 1 Tbsp worth). Then, pour the blend into your popsicle moulds (this recipe calls for 10 large popsicles) until they’re half way full. Set in your freezer for 30 minutes.
  3. Meanwhile, blend the cream blend and set aside. Once the 30 minutes is up, remove your popsicles from the freezer and pour the cream blend over the berry blend. It’s okay if the cream and berry blends together, it should still come out layered.

For mixed creamsicles:

  1. Place all of your ingredients (both berry and cream layer) into a high-powered blender and blend until everything is creamy and smooth.
  2. Pour into popsicle moulds, making sure you don’t over pour or else they will be harder to get out. Place in freezer and freeze for 5 hours to overnight.

Pour a little of both blends into the molds at the same time for marbled effect and taste berry and cream blends together ??
