CrockPot Pumpkin Dessert Cake with Caramel Sauce

Inside Scoop: Fall is finally here, right along with Crocktober! This fabulous CrockPot Pumpkin Dessert Cake with Caramel Walnut is something everyone needs to make! You probably didn’t even know you could make this good of desserts in the slow cooker. That is about to change!

When the fall months roll around, everyone starts getting a little fascinated with everything pumpkin. That is why I decided to use the CrockPot My TimeTM and create a delicious CrockPot pumpkin dessert that could be made in no time.

Using all homemade ingredients, you can without a doubt create a warm dessert for your family! The only work you will have to put in is gathering  the ingredients. 

Introducing a Delicious Crock-Pot Pumpkin Dessert

Since Crocktober has rolled around, I have been sharing some fabulous recipes that you can make in your slow cooker.

However, what about those desserts?

This Crock Pot Pumpkin Dessert Cake with Caramel and Walnuts is sure to satisfy any sweet tooth. If you plan on making this dessert for the holidays, at least you can be hands-off and just enjoy being around your family.

Let’s talk about how to make this dessert! 

Don’t worry, I am not all about making dessert hard.

In fact, this crockpot pumpkin dessert is one of the easiest desserts I have ever put together.

You are going to grab a large bowl and combine the pumpkin, evaporated milk, sugar, flour, eggs, melted butter, pumpkin pie spice, cinnamon, and vanilla. 

You are then going to mix until well combined and then pour into a your 4-quart greased CrockPot My Time TM and cover with the lid.

After that, you are then going to cook on high heat for 3 hours or until it is done.

Don’t forget to also sprinkle with cinnamon and sugar on top!

CrockPot Pumpkin Dessert Cake with Caramel and Walnuts

This simple crock pot pumpkin dessert is what healthy fall dreams are made of

Ingredients

  • 2 cups flour all-purpose works great
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp pumpkin pie spice or ground cinnamon (you can double this for more oomph!)
  • 1 tsp nutmeg
  • 1 cup sugar we used brown sugar
  • 1/3 cup maple falvored syrup (we love Lakanto brand)
  • 4 eggs (beaten)
  • 1 cup coconut oil
  • 1/5 cup walnuts chopped
  • coconut Whipped Cream
  • Caramel Syrup
  • 1 can reduced fat coconut milk
  • 1 tsp vanilla

Directions

  1. Beat eggs in a mixing bowl

  2. In a large bowl combine pumpkin, coconut milk, coconut oil, vanilla, and beaten eggs

  3. Mix all dry ingredients in another mixing bowl

  4. Slowly add wet ingredients into the dry and mix well avoiding clumps

  5. Mix until well combined and then pour into a 4 quart greased CrockPot

  6. Cook on high heat 3 hours or until set.

  7. Let cake stand, uncovered 10 minutes.

  8. Invert onto wire rack, invert again onto serving plate.

  9. Drizzle half of caramel sauce over cake.

  10. Serve warm with additional sauce, a scoop of vanilla ice cream and some coconut whipped cream.

The reason I share so many fabulous desserts in Crockctober is that this month is all about  “warm food” time.

    This looks absolutely incredible. I have never made this type of dessert in a crockpot. I have made baked apples and similar. They come out delicious. 🙂
