Here, you should not confuse the soy milk powder with soy flour. The soy milk powder works magically to add extraordinary creaminess to the frosting without making it runny.

How to Prepare Vegan Banana Frosting
You need to be very careful about the proportion of each ingredient in this recipe. You can use store-bought shortening like Crisco (Crisco shortening is vegan) instead of homemade vegan shortening.
Two sticks of the store-bought shortening kept at room temperature will give you the same texture as the homemade one.
Step 1: Caramelize your sugar mixture
For the first step of this banana frosting recipe, you need a small saucepan.
Add the sugar, water, soy milk powder, agave syrup or corn syrup, and salt. Whisk these ingredients together over medium heat until it starts to simmer. The mixture temperature should be 230F (110C).
To check, you can use a candy thermometer. Once it is inserted, the natural heat convection currents will start and therefore, you don’t need to worry about whisking anymore. Now, transfer this mixture to a heatproof bowl and keep in the refrigerator for at least one hour or until it’s near room temperature.
Step 2: Beat in all the ingredients
In the second step, you need to beat in the shortening until it’s fluffy. Now, mash the banana well, using a fork, and beat it into the frosting until the mixture is super smooth. Your vegan banana frosting is ready to serve.
You will get about 2 cups of frosting from this vegan cake icing recipe, which is enough for about one layer of an 8-inch diameter cake.
You can also store it in an airtight container in the refrigerator for up to 10 days. For optimum frost-ability, try keeping it near room temperature.

- 1 Cup Granulated White Sugar
- .5 Cup Water
- 2 Tbsp Soy Milk Powder
- 2 Tbsp Agave Syrup
- .5 Tsp Salt
- 1 Cup Vegan Shortening
- 1 Tsp Vanilla Extract
- 1 Banana mashed pureé
Carmelize your sugar mixture
Add the sugar, water, soy milk powder, agave syrup or corn syrup, and salt
Whisk these ingredients together over medium heat until it starts to simmer. The mixture temperature should be 230F
Beat in all the ingredients
Beat in the shortening until it’s fluffy.
Add in the pureed banana and mix well.
