It’s been one of those days.

It’s raining, the cat’s been sick all over the clean sheets, and your toddler is teething, she’s on auto-whine, clinging onto you like a fifth limb, and you’re struggling to get anything done.

When you’re having one of those days, it’s hard to stop, take a deep breath and decompress. Your thoughts are spiralling and your emotions are taking control. It’s hard to just live in the moment and take all the crap coming your way with a smile. But the thing about all of it is that learning to let go of the little things makes those ‘tough’ days much easier to roll off your shoulders.

Your cat puked, so what? Pop those sheets in the wash. Your boss has piled on the work? Okay, take it one step at a time. It’s raining on your beach day? Let it go, open that book that you’ve been longing to read.

Now, we say this but it’s definitely easier said than done. Emotions can take control and when they’re in your head, sometimes it’s hard to let them go. These emotions can ruin your moment, and cause sleepless nights. It’s not always easy to find your zen space and just enjoy whatever the moment throws your way.




There is one thing that we absolutely love, love, love for when we’re tossing and turning with too many thoughts at night, and when our days seem long and heavy…and that’s the wonderful scent of lavender.

C’mon, there’s a reason why they have lavender festivals!

We love all essential oils, and diffuse them on a regular basis, but the one that stands out the most when we feel anxiety and stress is lavender! Not only can you diffuse the oil, you can grow it and use as potpourri, or, better yet, eat it! Lavender is becoming ever popular in the culinary world, not only is it unbelievably fragrant and adds a little floral pzazz to your cooking, but when you are cooking with it and smelling it, it is so incredibly relaxing. Cooking has never been more enjoyable than when you are sniffing away at some lavender buds while you’re at it (oh yes, and it makes everything prettier as well). And throwing the subtle scent of lavender into something like these Gluten-free Lemon Poppyseed Muffins, well, it’s just brilliant!



So, you may be thinking… lavender, for real? IN my food? Yes, definitely!

We find that lavender works best with sweet flavoured foods and love adding it to our baking, salad dressings, as well, combined with a vanilla flavour, like white chocolate, vanilla ice cream or even yogurt. If you add a small amount of ground lavender (using a mortar and pestle works the best) you can hardly taste it, but if you really want some lavender oomph, throw in whole, dried petals.

You can sprinkle them on ice cream with some toasted coconut shreds, top your chocolate before it sets, or just sprinkle on the batter of your baked goods before you pop them into the oven. Did we forget to mention lavender icing? Delicious!



We can ramble on about the soothing effect lavender has on your nervous system. Smelling it is the best way to enjoy the calm that it brings, but not only does it work wonders on the nerves, it has other health benefits as well. Here are 4 additional health benefits lavender provides:

Note: Lavender is incredibly potent, if you add too much to these gluten-free lemon poppyseed muffins you may not enjoy it the way it should be enjoyed. We use a mortar and pestle to grind the lavender buds prior to adding to the muffins, and sprinkle a very small amount on the top afterwards. You can also chop it up very finely, or use a bud grinder.

Gluten-Free Lemon Poppyseed Muffins With Blueberry Glaze & Lavendar

  • 1.5 cups gluten-free flour blend *
  • ½ cup coconut flour
  • ½ cup cane sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp poppyseeds
  • 1 tsp lavender buds **reserve some whole buds for the top of your muffins
  • ½ cup coconut oil melted
  • 2 eggs room temperature (use flax eggs if vegan)
  • 2 lemons juiced
  • Zest from 1 lemon
  • 1 cup almond milk
  • 1 tsp vanilla extract

Blueberry Chia Glaze

  • 1 cup blueberries frozen
  • 1/4 cup maple syrup
  • 1 lemon juiced
  • 1 Tbsp chia seeds


  1. Preheat oven to 350 F.
  2. Line a muffin tin with coconut oil or muffin liners.
  3. Mix all the dry ingredients in a bowl (first 7 ingredients).
  4. Mix all the wet ingredients into a separate bowl, whisk for about 30 seconds.
  5. Pour the wet ingredients into the dry ingredients and mix thoroughly until well combined. Sprinkle a small amount of lavender on each muffin, for extra lavender flavour. Be careful not to sprinkle too much as it will overpower the muffin.
  6. Evenly portion your batter into muffin liners and bake for 20 minutes, or until toothpick comes out clean.

For Blueberry Glaze

  1. Add blueberries, lemon and maple syrup to saucepan and cook for 10 minutes, until thick (you can also blend to remove the blueberry chunks). Remove from heat, add chia seeds and set aside. 

    For a jam, add 1 more Tbsp of chia seeds. Top muffins with glaze before eating.

Recipe Notes

*  If your gluten-free flour blend doesn't have xanthan gum, add 1 tsp of xanthan gum to your dry ingredient mix. 

** These muffins are very dense, almost like scones (which is how we prefer them), for a fluffier muffin, omit coconut flour. For scones, bake in the form of biscuits.
