Inside Scoop: These are the most delicious gluten free flourless brownies you will ever taste.

We promise there is ALWAYS room for a cheeky brownie, especially when the brownie is made with high fiber almond flour, healthy fat coconut oil, sugar that is minimally processed and is much more nutrient dense than your classic store bought brownie, oh yeah, and dark chocolate to the extreme! These gluten-free flourless brownies are incredibly divine.

We’re always trying to find ways to reinvent the traditional brownie in a healthier way: brownies with black beans, sweet potatoes, chickpeas, flax seeds etc. These are all wonderful things to add, but can sometimes create extra time and work. Like who really wants to cook a sweet potato before adding it to dessert and cooking it AGAIN?! Okay, the two of us combined have a teething toddler, 3 jobs, a startup, and hardly any time as is, so, no thanks. We need simplicity in our lives.
These flourless brownies take one bowl, 10 simple and easy to find ingredients and 20 minutes to bake. They also come out utterly delicious (minus the utter because there is no dairy in this recipe whatsoever)! They are gooey and chocolatey, exactly what you look for in a brownie. Like, EXACTLY!
What else do they ooey gooey brownies have to offer?
Healthier ingredients. This recipe uses maple syrup, dark chocolate and coconut sugar, all have less refining and processing involved, and more of a dense nutritional profile than white sugar and milk chocolate.
Dark chocolate, 70%+ has an incredible antioxidant profile, making it a pretty amazing and delicious ingredient to add to your sweet treats. Aim for organic, fair trade chocolate and make sure it it 70%+, as the higher the cacao content, the greater yield for nutrients.
Almond flour, a much better flour alternative to white flour. Almonds are high in protein and fiber, which can help balance blood sugars, possibly allowing you to feel more satisfied after one piece.

One Bowl Coconut Oil Brownies
- 1/3 cup coconut oil
- 1 cup or 8oz dark chocolate chips 70% or dark chocolate chopped
- 1/3 cup coconut sugar
- 1/3 cup maple syrup
- 1 egg
- 1 Tbsp ground flaxseeds mixed with 3 Tbsp water
- 1/2 tsp baking soda
- 1 cup almond flour
- 1/2 tsp espresso powder optional
- 1 tsp vanilla extract
- Preheat oven to 350F.
- Grease an 8” square baking pan with oil.
- Place half of chocolate in a bowl.
- Place the bowl in a pot of hot water so that the chocolate can melt (or place chocolate in microwave for 15 second intervals until melted).
- Add oil, sugar, maple syrup and mix well.
Remove from heat and whisk in egg, flax mixture and baking soda.
- Fold in the flour and remaining chocolate.
- Pour into the baking pan and bake for 18-20 minutes.
- Let cool completely before cutting.

Can I leave out the egg?
Hi Alicia, I believe this recipe would have a hard time holding without the egg, but we have had great success with flax egg replacements for some other brownie recipes we’ve done. All you need is 1 Tbsp of ground flax mixed with 3 Tbsp of water, and let sit for 10 minutes. Please let us know if you find success with a flax egg replacement.
