That’s why you’ll find this grain-free granola to be so simple to put together, because who has time for elaborate granola recipes that contain a million and one ingredients, crazy amounts of superfood powders and cost you an arm and a leg for just one bite?

We definitely don’t.

Our Cinnamon & Pumpkin Grain-free Granola Recipe is made with whole foods, is high in healthy fats, contains a boat load of nutrition, is sweet and is the perfect yogurt, salad, cereal addition.

Yes, we threw salad in there because if you haven’t tried an arugula, sweet potato and granola salad before, you are definitely missing out.

A Grain-free Granola Recipe You Can Store for Weeks

 

Though we have to do some testing to see if this grain-free granola can be made into grain-free granola bars (we promise we will) we have a sneaky suspicion that with the right ratio of raw honey and granola mix, we could get some delicious snack bars out of this recipe.

Another one of our favourite things about this delicious 6 ingredient recipe is that you can large batch cook this recipe and store it in an air-tight container for weeks. Because it’s cooked with raw honey, when the granola gets stored it gets stuck together in large chunks, so when you pull it out it’s almost like a nut bark. We add these large chunks of grain-free granola to a bowl of milk, coconut yogurt, with this 3-ingredient chia jam, and a drizzle of peanut butter and sit down to relax in a moment of delicious zen.

It’s simply the best granola we’ve ever had (not too toot our own horn).

 

Cinnamon & Pumpkin Grain-Free Granola Recipe

Ingredients

  • 2.5 cups pecans roughly chopped
  • 1.5 cup shredded coconut unsweetened
  • 1 tsp cinnamon
  • 1/2 cup honey melted (if you buy raw it will be too hard, so add to microwave for 15-30 seconds)
  • 1/2 cup pumpkin seeds
  • 1/4 cup coconut oil melted
  • Salt to season
  • Optional: hemp or chia seeds, cacao powder

Directions

  1. Heat oven to 350F.
  2. In the meantime, mix all ingredients really well in a large bowl. Place on a large parchment paper lined tray and bake for 20-25 minutes, tossing halfway. Lay flat to cool.
  3. Don’t let the granola go too brown, keep an eye on it around the 20-minute mark, if to gets too brown it won’t be chewy, just hard and crispy and taste burnt.

    Can you substitute maple syrup for honey?

      Absolutely, the only difference being the granola may not stick together as nicely as it does with honey. We love using honey because we like getting those nice big chunks of granola, however, maple syrup would taste just as wonderful. Golden syrup, rice syrup or date syrup are also other sweetener options.
