I’ve been really into experimenting with grain-free baking lately. But the one thing I always find with grain-free baking is that it comes with the use of almond flour.

I mean I get it, almond flour is pretty versatile, but it can also be pretty expensive when you use it on a regular basis. And I really do use it on a regular basis, especially when baking cookies!

Cookies tend to be my go-to when it comes to baking! Especially easy cookies with nutrient dense, whole food based ingredients. Cookies that are great to give to my kiddo, and loaded with macronutrients!

And, these grain-free & healthy Morning Glory Cookies so far are one of my favourite breakfast cookies that use coconut flour instead of almond flour, and are loaded with all kinds of amazing ingredients.

 

Healthy Morning Glory Breakfast Cookies Loaded With Veggies & Fruit!

 

If you want an easy cookie that contains hidden veggies, fruit, and nuts, these morning glory cookies have got it going on!

I love creating them in little bite sized cookie fashion, because I can give my daughter two of them in the afternoon, and she’s totally satisfied, and I’m totally satisfied that she has something with carrots, apple, healthy fats, and protein, and it’s really a win-win for everyone.

Not only that, but these morning glory cookies can easily be cooked and frozen to be stored for later, and they make the perfect breakfast, grab-and-go recipe that you can take with you out the door when you’re in a rush!

PS. I also LOVE using them as a topper for yogurt or nice cream, they are truly a versatile treat!

The Grain-free Conundrum

 

Not everyone needs to be grain-free, and there are definitely some serious health benefits to consuming grains, but turns out, if you have gut issues then experimenting with a reduction in grains may benefit your digestive system.

You may even find relief eating grain-free treats, like these morning glory cookies, when you reduce your grain consumption.

Totally Healthy Grain-free Morning Glory Cookies

These delicious morning glory cookies are made with no grains, but are still sweet with the taste of maple, and contain amazing-for-you ingredients.

Ingredients

  • 2 bananas mashed
  • 2 eggs room temp
  • 2 Tbsp maple syrup
  • 1/2 cup shredded coconut unsweetened
  • 1/4 cup coconut flour
  • 1 Tbsp chia seeds
  • 3 Tbsp raisins unsweetened
  • 1/4 cup pecans chopped
  • 1/2 apple diced
  • 1 large carrot shredded
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 tsp sea salt

Directions

  1. Preheat oven to 350 F.
  2. In a large mixing bowl mash the bananas, mix eggs together and maple syrup together. In another bowl mix the coconut, coconut flour, chia seeds, cinnamon, baking powder and sea salt.
  3. Combine the wet ingredients with the dry ingredients and mix together.
  4. Fold in the raisins, apple, carrot and pecans. Mix until combined.
  5. Line a baking tray with parchment paper and create cookies with a cookie scoop or roll the dough in your hand, about 1 Tbsp sized cookies.
  6. Bake for 18-20 minutes, until golden brown on top.

    I just made these Morning Glory Cookies and they are cooling off right now, but the mixture was so wet, it was impossible to roll into a ball, so I had to add more flour and use a small scoop to put them on a baking sheet. Why is that ?

    My bananas were previously frozen and very wet after defrosting them, would that have been the problem. Also, I didn’t have coconut flour so I used AP flour.

    I am sure that they will still be delicious, but I wanted to know, thank you.

      Coconut flour is a highly absorbent flour. You’ll find that when cooking with it it can turn liquid dry very fast. My guess is that they turned out very wet because of the lack of coconut flour. However, if you added more AP flour it probably did the trick. Please let us know how they turned out.
