Raw Vegan Pad Thai Drizzled With Peanut Sauce
Ingredients
BASE INGREDIENTS:
- 1 zucchini large spiraled or julienned*
- 1 carrot large, shaved or julienned
- 1/2 head purple cabbage shredded
- 1/2 cup edamame organic
- 1/2 cup bean sprouts
- 3 Tbsp chives diced (about a small bunch)
- 1 tsp sesame seeds unhulled
- 2 tsp hemp hearts
PEANUT SAUCE INGREDIENTS:
- 1/2 cup peanut butter crunchy (the ONLY ingredient should be peanuts!)
- 2 Tbsp tamari or coconut aminos
- 1 tsp ginger. freshly grated
- 2-3 Tbsp water
- ½ Tbsp lime juiced (about ½ lime)
Directions
- Because of the water content of zucchini, it may be wise to use paper towel to absorb some of the excess water. You don't want soggy Pad Thai!
- In a large bowl, combine spiraled zucchini, carrot, cabbage, edamame and bean sprouts. Sprinkle with chives, sesame seeds and hemp hearts.
- In a small bowl, combine peanut butter, coconut soy sauce, ginger and lime. Stir together. Gradually add water until desired texture is achieved (you don't want it too thick or too thin - happy medium).
- Drizzle peanut sauce over vegetable base and toss. Serve immediately.

I created The Radiant Herbivore for anyone interested in adopting or refining a plant-based diet. I’m a firm believer that being healthy doesn’t mean your life has to be boring or complicated – in fact, I believe food should be an adventure and add some luxury to your life. I learned to ditch the notion of being perfect a long time ago – I still nosh on chocolate, attend BBQs and potlucks, eat out at restaurants and sip on fine wine. You won’t find me counting calories or worrying about carb + fat intake either – there’s seriously no need when you’re nourishing your body with healthy, whole foods!
Super yummy! I had to leave out the edamame because someone ate the bag I thought we had 🙁 I used extra bean sprouts and added green onion, cilantro and a little sriracha. I’ll definitely make this again!
Awesome! Glad you enjoyed 🙂
