Can we talk about this pesto for a second?
The pesto of all the pesto dreams, this Super Antioxidant Cashew Pesto was a creation that we whipped up using Veggie Pucks and we’re now so obsessed with it, we are deliberately creating meals that have a pesto element to it, just so we have an excuse to eat this pesto.
The most amazing thing about this pesto though, is the fact that you wouldn’t know there are 5 servings of green vegetables in it, the liver loving and supporting ones as well. Because we know not everyone has access to veggie pucks (as they’re a Canadian based company), we’ve put a substitution in this recipe for those of you who want to add the antioxidant and supreme green element to the pesto.
We also decided that pine nuts were wayyyyyyy too expensive for this pesto habit, so we swapped them out with cashews, but feel free to use pine nuts, walnuts or whatever nut your heart desires!

Super Antioxidant Cashew Pesto (Vegan)
This Antioxidant Cashew Pesto is the pesto of all pesto! It’s jam packed with 5 servings of vegetables, is vegan, uses cashews instead of pine nuts, and is so delicious, you’ll be addicted and want to lather it on everything.
