Okay, we’ll admit it, we FINALLY got our hands on the Crock-Pot Express Crock.

Whether or not the regular slow cooker should be upgraded has been an internal debate for a while and let’s just say that we’re so happy we made the upgrade. The Crock-Pot Express Crock creates effortless cooking.

First, there are 8 pre-set pressurized settings that makes one-pot meals like this pineapple jerk chicken a breeze. Think meats and stews, beans and chili, rice and risotto, poultry, soups, yogurts, multi-grains and of course desserts (Strawberry Rhubarb Apple Crumble, you’re next on the list to try!).

Also, the four cooking settings allows you to brown and sauté, steam, slow cook or pressure cook if you’re looking to make a meal in no time! Yeah, so it basically does everything, minus your taxes. Which is a beautiful thing because we’re all about meals that are quick, made in one pot and are super easy to clean up. It’s also just a bonus that the Crock-Pot Express Crock is both non-stick and dishwasher safe.

MARINADE, SET, COOK.

 

We used to think that a meal pineapple jerk chicken would take too long to prep and cook, but in reality, it’s quite simple.

If you’d like to save yourself some time you can easily buy a premade jerk seasoning, but the jerk seasoning that we provide below only takes an extra couple of minutes to prep, given you have all of the spices on the list.

Once the jerk seasoning has been prepped, all you have to do is marinade the chicken for a few hours so that it can absorb all the delicious flavours. Then, set it all in your Crock-Pot Express Crock or pressure cooker and wait around 15 minutes for the chicken to cook, and voila! Perfectly seasoned, fall off the bone jerk chicken done in 30 minutes or less.

Cook up some black beans and rice or use up some of that leftover pineapple and add it to this creamy coleslaw recipe. Crock-Pot Express Crock Sweet & Tangy Pineapple Jerk Chicken Recipe

This pressure-cooked Pineapple Jerk Chicken falls off the bone and is so easy to cook in the Crock-Pot Express Crock. Perfectly paired with a side of rice and beans.

Ingredients

  • 6 bone-in chicken thighs

Jerk chicken paste:

Jerk chicken marinade:

  • 1 Tbsp jerk chicken paste
  • 1/2 pineapple chopped
  • 3 Tbsp lime juice
  • 1 Tbsp low-sodium tamari substitute for coconut aminos for Paleo

Directions

  1. Assemble the jerk chicken paste and set aside.
  2. Pat chicken dry and then rub 1 Tbsp of paste all over chicken and set in a 9x9 baking dish.
  3. Take the pineapple and hand squeeze the juice out of the chopped pineapple, then place the pineapple and pineapple juice in a bowl. Add the rest of the jerk chicken marinade to the bowl and mix together until everything’s combined.
  4. Dump the marinade over the chicken and let sit for 1-2 hours, or overnight.
  5. Get your Crock-Pot Express Crock ready by placing the rack at the bottom and dumping 3/4 cup of water at the bottom (you don’t want the chicken to cook in the water).
  6. Place your marinated chicken on the rack and dump the remaining marinade over top of the chicken.
  7. Make sure the steam option is shut, close the lid and press the poultry button (about 15 minutes).
  8. Once finished, release the pressure and let sit for 5 minutes.
  9. Meanwhile, crisp up the skin by turning on your grill or broiler.
  10. Place the chicken thighs under broil for 5 minutes, until skin is crispy. *You’ll want to do this as the pressure cooker essentially steams the chicken so it’s juicy but the skin is very moist.
  11. Remove the juices from the slow cooker and use as a gravy.
  12. Serve with: rice and beans, baked or fried plantain, coleslaw or salad.
