Have you ever tried refrigerator cucumbers, AKA quick pickles before?
If you have, then you know that they can really add depth to your sandwiches and salads. And, if you haven’t tried refrigerator cucumbers, then good friend, you are going to love this recipe.
Quick refrigerator cucumbers are the perfect lazy hack for regular pickles. All you need to do is slice cucumbers into thin medallions and add them to a vinegar and sugar mixture and let them soak the flavours overnight, so simple.
No mega jarring sessions, just quick and simple cucumbers that can be stored in the fridge for a couple of weeks and used in so many delicious dishes.
We decided to change these quick pickles up a little bit by adding a little bit more flavour, and are using cane sugar instead of highly processed white sugar. Since we love a good bit of spice and a dash of sweet, we are throwing in a bit of chili peppers, shallots and mixing it all together with apple cider vinegar and cane sugar.

Using apple cider vinegar for refrigerator cucumbers is also a great option, as it’s been shown to have an antimicrobial effect, and helps lower the growth of gram-negative bacteria like Staphylococcus aureus and Pseudomonas aeruginosa (which are a bacteria strain that can contribute to leaky gut). Not only does it help inhibit these strains of bacteria, but it also has antiviral, anti-yeast and anti-fungal benefits- making it really, truly great for your gut.

Quick Spicy & Sweet Refrigerator Cucumbers
- Mix the vinegar and cane sugar in bowl until the sugar is dissolved.
- You can taste test the mixture to make sure the ratio is to your liking, you can add more sweetness, more spice, or more vinegar.
- Add shallot and chili flakes, then cucumber. Make sure the cucumber is almost submerged so they can soak all the flavours.
- Leave in fridge overnight before using.
