Inside Scoop: This creamy broccoli salad will make a broccoli lover out of anybody.

 

Not even going to lie to you right now, I may be a nutritionist, but I have no desire for regular or plain broccoli. Even roasted broccoli, I need to season the crap out of it to make it palatable for me. It’s weird, dip it, cheese it, add it to stir fry, broccoli is completely fine. But, thinking of plain broccoli? I just probably wouldn’t even.

No one said you have to like everything right? I’m not one to be a picky eater, but I have my ‘things’- plain tomatoes… not a fan! And even though I work in the nutrition field it doesn’t mean I have to like ALL vegetables ALL THE TIME.

Just because I’m a healthy food advocate, doesn’t mean that I’m not also an advocate for making food taste way better. Heck, we’ve been trying to make food more palatable for thousands of years, so believe me when I say no one should make you feel guilty for not liking the taste of veggies!

 

This healthy Creamy Lemon Caper Broccoli Salad has it all

 

I could eat this salad by the bucket full, and it’s totally going to make you change your mind about broccoli. It’s creamy, spicy, sweet, salty, it literally has every single flavour element, perfectly combined into a coleslaw like dressing and drizzled all over kale and broccoli. You can even add other elements like chicken or tempeh, goat cheese or cranberries. It’s really a big bowl of nutrients that’s been masked by delicious creamy salad dressing.

I might not like broccoli plain, but I LOVE delicious salad dressings that change my mind about eating the veggies I’m not massive on.

 

Then, on top of the taste, there are the health benefits!

 

Aside from all this flavour talk you gotta get the broccoli in every now and then because broccoli is a superfood for so many different reasons. First, broccoli is incredibly high in some pretty important health promoting antioxidants, such as, Vitamin C, Vitamin E and Vitamin A.

Not only is it rich in these well needed vitamins, it’s also a great source of key antioxidants called carotenoids.

So to all my broccoli lovers and haters alike, this salad is a great way to get your daily dose of the broc. You’re going to love it for so many reasons:

  • Contains an incredibly high amount of Vitamin K
  • Rich source of Vitamin C making it a perfect winter salad
  • Flavour punch salad dressing: creamy, sweet, salty with a hint of spice
  • Liver loving elements
  • Friendly on the gut

Creamy Lemon Caper Broccoli Salad

This creamy broccoli salad tastes just like a slaw with a creamy and sweet lemon caper dressing that has a hint of a kick.

Ingredients

  • 5 cups broccoli florets chopped into 1″ pieces (about 1 large head)
  • 1 bunch kale, de-stemmed and chopped
  • 1 Tbsp extra virgin olive oil

Dressing

  • 1/4 cup vegenaise *optional, or add in avocado mayo
  • 1 Tbsp maple syrup or honey
  • 1/2 tsp red chili flakes add more if you prefer it to be spicier
  • 2 cloves garlic minced
  • 1/2 lemon juiced (about 2-3 Tbsp)
  • 1 Tbsp capers roughly chopped
  • 1/4 tsp sea salt

Directions

  1. Heat the oil in a pan over medium heat.
  2. Add broccoli and saute for about 5-7 minutes.

  3. Remove broccoli from heat. Meanwhile, whisk all the dressing ingredients together. 

  4. Take broccoli and add to kale bowl, add the dressing and toss together thoroughly. 

  5. Top with cranberries, raisins, hemp seeds, avocado, chickpeas or anything you'd like.
