Inside Scoop: This sugar free almond milk recipe is naturally sweetened with dates, only 3 simple ingredients!
You want me to make homemade almond milk now? Come on, who has time for that? It’s not like it’s a simple recipe or anything.
Oh, but wait, whipping up this creamy 3 ingredient/ sugar free almond milk, is incredibly simple and uses 2-3 (depending if you want the sweetness) readily available whole food ingredients.
All you need to do is prep ahead by soaking some almonds, blend with water and dates, and squeeze from pulp. So simple.
HOMEMADE ALMOND MILK VS. STORE BOUGHT ALMOND MILK
We’re about to change the way you view the so-called ‘healthier way’ of drinking milk.
Most store-bought almond milk contains hardly any almonds!!!!! We actually wish we were fibbing, but check out this article right here. It’s mainly made with water, some fillers, emulsifiers, flavour enhancers, sweeteners and cheap and/or synthetic forms of vitamins. So. Not. Cool.
Also, a lot of store-bought almond milks are processed with an algae based preservative and emulsifier called carrageenan. Carrageenan is indigestible, provides no nutritional value, and has actually been shown to increase inflammation and possibly trigger IBS, bloating, and food allergies.
Again, not cool. It seems as if we’ve been tricked.
Now, some almond milk brands have moved away from carrageenan and switched to locust bean gum, or guar gum, but these two thickening and preserving agents have also been linked to gastro upset in those who have G.I. issues.
NOT TO WORRY!
But hey, don’t worry we have your back because homemade almond milk is one of the best and easiest hacks out there. And you know how your supermarket has those sweetened almond milk jugs, you know, the ones that are jam packed and filled to the tits with sugar? Well, guess what, ours isn’t!
First thing you have to do is throw out the idea that almond milk is a complicated process, because making your own almond milk is one of the easiest things that even the culinary challenged can tackle.
Not only can you control what you put in your milk, but best of all, it’s fresh, cleaner, cheaper and much tastier than the store-bought stuff.
Next, you need to go out and buy almonds (and dates, if you want the sweet version). See, simple and healthy. Because homemade almond milk is made with raw pre-soaked almonds and is free from artificial additives, preservatives, emulsifiers and sweeteners.
Homemade almond milk is great for: Lattes, creamer, cereal, chia pudding, smoothies, on the side of a cookie or brownie, ice cream, overnight oats, or straight up (just to name a few)! 3 Ingredient Naturally Sweetened Almond Milk
- 1 cup almonds raw; pre-soaked overnight
- 3-4 cups pure water depending on the consistency you prefer
- 2-3 medjool dates pitted
Be creative. Try a different combination every time.
- Soak the raw almonds in water overnight in the fridge. Almonds and other nuts naturally contain some nutritional inhibitors. You can greatly reduce their content by soaking the almonds. This will also help make them more digestible.
- Rinse the soaked nuts well under cold water.
Blend the 3-4 cups of water with 1 cup of almonds and dates.
Strain the milk from the pulp* using a nut milk bag or cheese cloth. Make sure to squeeze out all the liquid.
Store in a glass container in the refrigerator for 3-5 days.
*You can use the pulp for smoothies, add to your oatmeal or use it in cookies. Try these Vanilla Almond Cookies.
