A sweet and crunchy bulb, fennel is a light and airy food that’s amazing to eat on its own or to add to salads. Not only does it add a beautiful taste and texture but it’s incredibly high in some pretty nutritious vitamins and minerals. Our friendly fennel is power packed with phytonutrients like quercitin and rutin which help strengthen your immune system (something that is truly important when considering cleaning up your diet). Fennel is also high in fiber and Vitamin C which helps clear the colon and aid in detoxification. These nutrients keep your gut running smoothly and your immune system ready to stomp out nasty bugs that causes colds in the winter time.

This fennel salad is amazing as a side, add some vegetable based protein such as white or garbanzo beans, place it on a bed of arugula and shave some parmesan cheese on top and you have a wonderful meal that will make you feel light and tastes delicious.

 

 

Super Fennel Salad

Ingredients

  • 1 fennel bulb thinly sliced
  • 1 carrot grated
  • 1/2 small red onion thinly sliced
  • 2 Tbsp pomegranate seeds or cherry tomatoes; halved
  • 1 bunch fresh dill chopped
  • 1/4 cup lemon juice
  • 3 Tbsp extra virgin olive oil
  • salt & pepper to taste

Directions

  1. Mix everything in a bowl with the lemon juice and olive oil.
  2. Season with salt and pepper.
  3. Enjoy!
