Vegan Gluten-Free Ginger Molasses Cookies

These ginger molasses cookies will literally spice up your life. They take 10 minutes to prep, and are incredibly delicious.

Directions

  1. Preheat oven to 350 F and line a baking sheet with parchment paper. Combine almond flour, spices, baking soda and baking powder into a bowl.
  2. In another bowl, mix melted coconut oil, molasses and vanilla until well combined.
  3. Add wet ingredients to dry ingredients and mix well.
  4. Roll into balls, each with about a Tbsp of batter.
  5. Add a little more almond flour if mixture is too moist, or a little water if mixture is too dry. Flatten lightly with fork.
  6. Bake for 9-10 minutes, let cool without touching for 10-15 minutes (if you can wait that long to dig in!)

Recipe Notes

*Make sure you wait until these are completely cool (we know, we know). Since they are vegan they need a minute to harden, but when they are cool they become just like ginger snaps.
