Preheat oven to 350 F and line a baking sheet with parchment paper. Combine almond flour, spices, baking soda and baking powder into a bowl.
In another bowl, mix melted coconut oil, molasses and vanilla until well combined.
Add wet ingredients to dry ingredients and mix well.
Roll into balls, each with about a Tbsp of batter.
Add a little more almond flour if mixture is too moist, or a little water if mixture is too dry. Flatten lightly with fork.
Bake for 9-10 minutes, let cool without touching for 10-15 minutes (if you can wait that long to dig in!)

*Make sure you wait until these are completely cool (we know, we know). Since they are vegan they need a minute to harden, but when they are cool they become just like ginger snaps.
