PALEO & VEGAN CHOCOLATE CHIP COOKIES
What’s the secret to the best paleo chocolate chip cookies out there? We’ll give you a hint – they taste amazing, and they’re really simple to make!

- 2 cups almond flour
- 1/2 cup dark chocolate chips
- 1/2 tsp baking soda
- 2 Tbsp coconut oil melted
- 3 Tbsp maple syrup
- 1 Tbsp ground flax to make flax egg - see notes,
- 1/4 tsp salt
Preheat oven to 375F. Line parchment on a cookie sheet.
Mix the dry ingredients in one bowl, and cream together the wet ingredients in another bowl. Pour wet ingredients into dry and mix until you have a big ball of batter.
Chill for an hour for a chewier cookie.
When ready, scoop about 1 Tbsp cookie batter onto your cookie sheet and bake for about 12-14 minutes, until top is golden. The flatter they are the faster they will cook.
* mix 1 Tbsp of ground flax with 3 Tbsp water and set aside for 10 minutes
