  • 12 oz coleslaw prepackaged is fine
  • 2 cups spinach
  • 1/4 cup sesame seeds toasted
  • 3/4 cup chickpeas about 1/2 can drained and rinsed
  • 1 avocado
  • 5 cherry tomatoes
  • 5 basil leaves fresh and chopped
  • 1/4 tsp sea salt
  • 1/4 tsp pepper

Lemon Tahini Dressing


  1. Add slaw, spinach leaves and chickpeas to a large bowl or container for mixing.
  2. Prepare the lemon tahini dressing by blending all the ingredients or mixing with a fork.
  3. Pour dressing onto the salad and mix using a fork.
  4. During the mixing process, add salt and pepper to taste.
  5. Distribute into bowls or plates and garnish each bowl with avocado, tomato, sesame seeds and basil as shown in the pictures.
