Loaded Vegetarian Poutine With Mushroom Gravy (vegan version)

Ingredients

  • 1 sweet potato medium, sliced lengthwise into small fry strips
  • 1 russet potato medium, sliced lengthwise into small fry strips
  • 1/2 rutabaga sliced lengthwise into small fry strips
  • 2 carrots large, sliced lengthwise into small fry strips
  • 2 Tbsp avocado oil
  • 1 1/3 cup vegan mushroom gravy
  • 1 cup shredded cheese vegan or goat mozzarella
  • Salt and pepper to season fries

Directions

  1. Preheat the oven to 420 F.
  2. Cut the root veggies, and toss in oil, salt and pepper.
  3. Line a large baking try (you may need 2) with parchment paper and place the root veggies on the tray, be sure to not overcrowd.
  4. Bake for 30-35 minutes, flipping half way.
  5. Meanwhile prepare the mushroom gravy according to instructions (see above).
  6. Alternatively, you can buy a pre-packaged mushroom gravy – we left some links to our favourite healthy brands.
  7. Once everything is cooked, portion root veggies into separate bowls, drizzle ¼ cup of cheese on each, and top with apx. 1/3 cup mushroom gravy. Let sit 1 minute to melt.

Recipe Notes

Keep it classic do all potato. Optional: fried sage, green onion, full-fat yogurt, cashew cream cheese, or use salsa and guacamole instead of gravy.
