This Chili Cheese Oven Roasted Acorn Squash recipe is the perfect side dish, or used as a salad topped with pesto, balsamic dressing, goat cheese, pumpkin seeds and cranberries.

Ingredients

  • 1 acorn squash seeded; quartered and cut into half moons
  • 2 Tbsp avocado oil or coconut oil or oil of choice
  • 1/4 cup parmesan cheese *use vegan mozzarella or nutritional yeast for dairy-free
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1/4 tsp sea salt
  • 1 Tbsp Antioxidant Pesto

Directions

  1. Preheat oven to 400F degrees.
  2. Toss acorn squash with all the ingredients.
  3. Lay out flat on parchment lined baking sheet, making sure they aren’t touching and not overcrowded on pan.
  4. Bake 30-40 minutes until cheese is crispy.

To Make Into Pesto Salad

  1. Toss some greens in pesto and a drizzle of balsamic vinegar. Top with a couple pieces of acorn squash, goat cheese, pumpkin seeds, and cranberries or pomegranate seeds.
