Creamy Lemon Caper Broccoli Salad

This creamy broccoli salad tastes just like a slaw with a creamy and sweet lemon caper dressing that has a hint of a kick.

  • 5 cups broccoli florets chopped into 1″ pieces (about 1 large head)
  • 1 bunch kale, de-stemmed and chopped
  • 1 Tbsp extra virgin olive oil


  • 1/4 cup vegenaise *optional, or add in avocado mayo
  • 1 Tbsp maple syrup or honey
  • 1/2 tsp red chili flakes add more if you prefer it to be spicier
  • 2 cloves garlic minced
  • 1/2 lemon juiced (about 2-3 Tbsp)
  • 1 Tbsp capers roughly chopped
  • 1/4 tsp sea salt


  1. Heat the oil in a pan over medium heat.
  2. Add broccoli and saute for about 5-7 minutes.

  3. Remove broccoli from heat. Meanwhile, whisk all the dressing ingredients together. 

  4. Take broccoli and add to kale bowl, add the dressing and toss together thoroughly. 

  5. Top with cranberries, raisins, hemp seeds, avocado, chickpeas or anything you'd like.
