- 1 cup walnuts
- 12 dates pitted
- 2 Tbsp coconut oil melted
- 1/2 tsp cinnamon
- 1/4 tsp sea salt
- 3/4 cup cashews soaked for 2 hours and drained
- 2/3 cup maple syrup
- 1/2 cup freshly squeezed lemon juice
- zest from one lemon
- 1/4 cup coconut oil melted
Process all of the crust ingredients in a food processor and press into a square baking dish.
Combine all the filling ingredients in a food processor and pour over crust. Place in the freezer until firm. It is best to eat these frozen as with they will get soggy if they come to room temperature.
