  • 1 cup whole wheat flour sprouted
  • 1 cup spelt flour sprouted
  • 1/3 cup rolled oats
  • 2 tsp baking powder
  • 1 Tbsp avocado oil or oil of choice
  • 2 ΒΌ cups almond milk or non-dairy milk of choice
  • 1 Tbsp lemon juice
  • 2 tbsp honey
  • 1/4 tsp sea salt


  1. Mix the milk with lemon juice to sour, and set aside.
  2. Grease a 2lb loaf tin. Preheat the oven to 360F.
  3. Mix all of the dry ingredients together in a large bowl and make a well in the centre.
  4. Gradually add in the wet ingredients and mix (reserving about 1 tbsp honey). Don't stress, this will be a wet mixture.
  5. Transfer to the prepared cake tin and drizzle over the remaining honey and a sprinkling of oats.
  6. Bake for 50 - 60 minutes and allow to cool in the tin for a few mins before removing and wrapping in a clean tea-towel to cool completely.
