Vegan Cauliflower Gratin

  • 1 head cauliflower cut into florets
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp gluten free flour blend
  • 3 cloves garlic minced
  • 2 cups almond milk or other nut based milk of choice
  • 1 nuts for cheese triangle or 125 grams of vegan cheese *use 2 cups shredded dairy cheese for vegetarian version
  • 1/4 tsp turmeric
  • 1/4 tsp sea salt
  • 1/4 tsp pepper


  • 1/2 cup breadcrumbs use whole wheat or gluten-free
  • 1/2 Tbsp extra virgin olive oil


  1. Preheat oven to 425 F.
  2. Mix your cauliflower, 1 Tbsp oil, and sprinkle salt and pepper. Lay on a baking tray and bake 20 minutes, flipping half way.
  3. Meanwhile, in a warm saucepan add 1 Tbsp oil, garlic and cook for 30 seconds.
  4. Add the flour and whisk for about 1 minute – don’t let get too warm/ turn brown.
  5. Add in the milk and whisk until it starts to thicken.
  6. Add the vegan cheese, turmeric, and season with salt and pepper.
  7. Cook down until everything is combined and the sauce is thick and creamy.
  8. Test to see if you need to add more salt or garlic.
  9. Remove the cauliflower from oven, oil a 8x8 baking dish and place the cauliflower in.
  10. Top the cauliflower with the cheese sauce.
  11. In a bowl mix the breadcrumbs and oil.
  12. Sprinkle the bread crumbs on top of the cauliflower sauce.
  13. Bake for an additional 20 minutes.
