Berry layer

  • 1/2 cup Four O’Clock Wild Berry tea steeped
  • 1/2 cup blueberries frozen or fresh
  • 1/4 cup strawberries chopped
  • 1.5 Tbsp maple syrup
  • 1 lime juiced
  • 1.5 Tbsp full-fat coconut milk canned

Cream layer

  • 1 cup full-fat coconut milk canned
  • 1 lime
  • 1/4 cup maple syrup
  • 1-2 Tbsp Four O’Clock Wild Berry tea steeped
  • Optional: fresh sliced berries to add to the creamsicles

For layered creamsicle:

  1. Blend your berry blend layer in a high-powered blender until you have a smooth consistency with no chunks.
  2. Meanwhile, add any fresh fruit to the bottom of your moulds for a chunky consistency (about 1 Tbsp worth). Then, pour the blend into your popsicle moulds (this recipe calls for 10 large popsicles) until they’re half way full. Set in your freezer for 30 minutes.
  3. Meanwhile, blend the cream blend and set aside. Once the 30 minutes is up, remove your popsicles from the freezer and pour the cream blend over the berry blend. It’s okay if the cream and berry blends together, it should still come out layered.

For mixed creamsicles:

  1. Place all of your ingredients (both berry and cream layer) into a high-powered blender and blend until everything is creamy and smooth.
  2. Pour into popsicle moulds, making sure you don’t over pour or else they will be harder to get out. Place in freezer and freeze for 5 hours to overnight.
