Sundried Tomato Cashew Cream Pasta Sauce

This mouth watering “cream” sauce alternative will leave you satisfied without the bloat.

Ingredients

  • 1 cup onions roughly chopped
  • 1.5 cups cashews raw; soaked at least 2 hours
  • 1 cup vegetable broth
  • 1/4 cup sundried tomatoes in oil
  • 1 tsp apple cider vinegar
  • 1 Tbsp lemon juice
  • 1 clove garlic
  • 1 Tbsp nutritional yeast
  • 2 Tbsp extra virgin olive oil or oil of choice
  • splash of white wine
  • Pinch red pepper flakes
  • salt and pepper to taste

Directions

  1. Sautee onions on medium heat in oil, about 5 minutes, until translucent.
  2. Add onions along with all the rest of the ingredients to a high powered blender, blend until smooth and creamy. Heat in saucepan, add splash of white wine and a pinch of red pepper flakes, salt and pepper.
  3. Serve with your choice of pasta.
