Veggie & Goat Cheese Loaded Spelt Flatbread

Ingredients

Pizza Crust (serves 1-2, measure accordingly)

  • 1 cup spelt flour
  • 6 Tbsp water
  • 1.5 Tbsp extra virgin olive oil divided*
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp apple cider vinegar
  • 3 garlic cloves minced*

Pizza Sauce

  • 2 cups tomatoes or 1 large can diced tomatoes
  • 1 can tomato paste
  • 3 garlic cloves minced or 2 tsp garlic powder
  • 2 Tbsp extra virgin olive oil
  • 1 tsp coconut sugar
  • 1/4 cup fresh basil loosely packed; chopped
  • 2 tsp dried oregano or fresh
  • salt and pepper to taste

Directions

Dough

  1. Mix spelt, baking powder, salt together thoroughly.
  2. Add in apple cider vinegar, water, 1 Tbsp oil and mix together to form dough. Knead a couple times if necessary.
  3. Roll dough out to approximately 1/4 cm in thickness (not too thick, but not too thin or else it will crisp).
  4. Cook on parchment paper at 400 F for 10 minutes.
  5. Remove crust, add sauce, cheese and toppings of choice, bake for another 10 minutes.
  6. *Note: For garlic crust, mix the minced garlic into ½ Tbsp oil, butter or ghee, and lightly brush on the crust before baking. It should come out golden, garlicky and delicious.

Pizza Sauce

  1. Add everything to a sauce pan and cook over medium, apx. 15 minutes. Season accordingly.

Recipe Notes

*Note: For garlic crust, mix the minced garlic into ½ Tbsp oil, butter or ghee, and lightly brush on the crust before baking. It should come out golden, garlicky and delicious. Pizza Sauce
